Rip-rawing salads we love: Layered salad
When you’re homeschooling, you need your meal preparation to be as simple as possible. This salad is easy and can be made a day ahead. The quantities listed will feed a family of 4-6. As a guide, I cook 1 egg per person, minimum of 4. The dish I used is 23 x 18 x 6 cm.
Ingredients and method
Layer the ingredients in this order:
1 iceberg lettuce – sliced
4 spring/green onions sliced
4-6 radishes, washed and sliced
4-6 hard boiled eggs, sliced
A few handfuls of frozen peas
Enough mayonnaise to cover
Grated cheese sprinkled on top of the mayonnaise
3-4 rashes of fried bacon, chopped and sprinkled on top of the cheese
3-4 tomatoes, sliced
And you’re done!
I use the tomato slices as a guide for portioning.
